So, the plan was to have a shakshuka recipe today. A good old reliable classic - until Saturday came around and I somehow managed to mess it up (for next week's post I cook stuff on a weekend). Don’t ask me how. It just… didn’t work, that happens. So I had to think fast and pivot.

Luckily, I had some leftover potatoes hanging around. And as every dad (or kitchen survivor) knows - some of the best things come from two things: panic and leftovers. Here we go: this griddle potato bread. From the same book that brought us the mashed potatoes recipe. Resourcefulness, carbs, and a hot pan - can’t go wrong.

These potato things are real all-rounders. I had one with my breakfast, then tossed a few into our lunchbox before heading off to the zoo (yep, it’s summer in Amsterdam - and every sunny day cannot be wasted).

Cooking time: 30 minutes

Serves: 6 people

Ingredients:

  • 500g cooked potatoes, mashed

  • 50g butter, melted, plus extra for frying

  • 150g plain flour

  • sea salt

Steps:

  1. Combine the potatoes with butter and fold in the flour. Season with sea salt.

  2. Shape into six flat circles.

  3. Melt some butter in a frying pan over a medium heat and fry for about 5 minutes on each side until golden brown.
